Pasture Raised Mangalita Pork

Our pork is raised slowly for best taste and marbling — finishing at 12-15 months. We will continually improve our meat quality through carcass analysis and refined herd management practices. Mangalitsa is an old world breed from Southeast Europe (Hungary, Austria, Romania & Serbia). The dark red meat, full of flavor with unmatched lard quality, propelled this pig into large scale production 200-250 years ago.

In both our pig herd of Red and Swallow Belly Mangalitsa, and our Mangalitsa cross herd, which contains hardy breeds with good green forage habits (Kune Kune, Berkshire), we supplement no commercial hog feeds. In addition to rotationally grazing on pasture, we mix our own traditional feeds of soaked, locally grown organic wheat and barley. We source non-GMO & unsprayed grain hay (oat, pea, barley, wheat, etc.) to maintain forage habit during the winter season and build compost/soil. Right now we are working on how to phase in organic milk from our Kerry cattle into their diet. We do not confine sows during breeding or farrowing. With each successive generation, we strive to continually improve mothering ability in a self-built nest as well as forage habit in their litters.

At one time Mangalitsa pork was traded through Vienna to almost every country in Europe, as millions of Mangalitsas were produced by Austro-Hungarian royalty. Now, they are being brought back from low numbers by a handful of breeders worldwide. Their foundational wild genetics ensured their success in cold climates, disease resistance, and excellence at foraging. The resulting stock’s vigorous forage habit resulted in a healthier-for-you pork packed with Omega 3 and 6, and in good balance. In European studies, their lard profile is touted as healthier than any other breed with more monounsaturated fat by percentage. This is good animal fat that you feel light up your brain as you eat it. If your brain obtains 70% of its energy solely from fat, why not deliver the cleanest energy possible? Organic Grass Fed Lamb

Our sheep rotationally graze in the warm season on pasture. In winter, they are organic grass (inc. alfalfa, sainfoin) hay fed with no grain supplement. Our lamb cuts beautifully, with sweet, clean fat at 8 months to a year old. We prefer the grass fed and finish as the meat is darker, leaner and deeply flavorful. We also butcher and sell meat from sheep over 1 year old, and as dedicated shepherds strive to defeat the stigma Americans have placed on Mutton. Truly Free Range Eggs

Our flock ranges 100% freely on the farm, choosing to roost with the pigs and lay in a converted box truck. Hundreds of wild pheasants are their vivacious companions and competitors. The hens compost in the pig pens in the winter, cleaning up rogue grains, and feast on bugs in the warm season. They are never treated with any chemicals or given medicated feed. They live off the fat of the land, and you will taste that difference.

Wool & Fiber Art

Our sheep are hardy, wool sheep that lend themselves well to creating wool products. Our mixed flock includes Merino (Rambouillet), CVM and Targhee genetics. With careful selection we now yield a variety of natural colors. As we build relationships with small Western wool mills, we aim to produce unique hand dyed yarns on the farm. Look out for our new line of fiber products launching in 2024 to include bulky and worsted yarns, in white, naturally plant dyed, and raw colors (black, brown).
